⭐ Sosis Bandari Recipe (Iranian Spicy Sausage Stir-Fry)
One of the most popular Iranian fast foods is Sosis Bandari. It’s one of those dishes that cooks quickly but has a flavor so tempting that everyone wants to try it.
The variety of flavors in this dish comes from the type of sausage you use and how spicy you make it — which depends entirely on your own taste.
However, the original version of this dish, which is considered a signature fast food of southern Iran — especially Abadan and Bandar Abbas — is usually spicy, and that’s exactly how people from those cities know and love it.
The main ingredients are sausage, potatoes, and onions, but adding bell peppers is also common.

🟩 Tips for Making Better Sosis Bandari
1. You can use the same method with bell peppers — let them soften and sweeten. You may sauté them along with the onions.
Use good-quality sausages from reliable brands. Sausages with a high percentage of meat or chicken work best. Homemade sausages are even better. (I’ve written the homemade sausage recipe in another post.)

2. Although this fast food is quick to make, letting it sit for a few hours before serving allows the sauce to absorb into the ingredients and makes the dish much more flavorful.
3. Avoid using potatoes that are underripe or have green streaks, as they ruin the taste.
4. The amount of pepper and spices is entirely up to you. But if you want the original southern flavor, chili is an essential part of this dish.

5. For better flavor, caramelize the onions. If your onions remain firm or crunchy, the dish won’t get the pleasant taste you’re looking for.
To caramelize: heat oil over low heat, add the onions, cover the pan, and cook gently for 10–12 minutes. This softens them and brings out their sweetness. Then remove the lid and sauté for another 3–6 minutes until caramelized.

- Not sautéing the onions and peppers properly
If they don’t become soft and caramelized, the dish will taste raw and bland. - Using low-quality sausage
Sausages with low meat content ruin both flavor and texture and usually have an unpleasant smell. - Dicing the potatoes too small
Small cubes break and turn mushy during cooking, ruining the appearance of the dish. - Adding too much water
Sosis Bandari should have a semi-thick consistency. Too much water makes the sauce runny and tasteless. - Not sautéing the tomato paste
If tomato paste isn’t fried in oil first, it gives a raw and unpleasant flavor. - Adding all ingredients at once
This prevents proper texture and flavor development. Sosis Bandari must be cooked step by step. - Using too little spice or no chili
The authentic southern version is spicy and flavorful. Though spice level is personal, removing chili changes the original taste. - Cooking on high heat
High heat burns the tomato paste and makes the sausage tough. Gentle heat is ideal. - Not letting the sauce thicken and simmer enough
Without proper simmering, the flavors won’t come together and the dish won’t taste right.

1 tsp turmeric
1 cup water
Directions
- Step 1: Prepare the ingredients
Peel the onions and potatoes. Slice the onions into strips. Cut the potatoes into medium-sized cubes (not too small so they don’t break after boiling).
Boil the potatoes until half-cooked.
Dice the bell pepper and set aside. - Step 2: Cook the onions and potatoes
Place a pan on heat and caramelize the onions using the method described earlier.
If using bell peppers, sauté them the same way.
Add turmeric and tomato paste to enhance the color and flavor.
At the same time, boil the diced potatoes with a small amount of water until half-done, watching the texture so they don’t overcook.
Step 3: Prepare the sausages
Slice the sausages diagonally for a better appearance.
Once the onions and peppers are sautéed, add the sausages and stir-fry briefly.
Add mushrooms and cheese if you like.
Then add the half-cooked potatoes to the mixture.- Step 4: Make the sauce
In a separate pot, heat some oil and add tomato paste. Sauté until fragrant.
Add water, salt, and lemon juice, and let it simmer to thicken slightly.
Add chili based on your taste. - Final Step
Pour the sauce over the sausage and potato mixture. Let everything cook together until the sauce is fully absorbed.
You can let it rest for a while for deeper flavor, or serve immediately while hot. - 🥪 Assembling the Sandwich
For the sandwich filling, use sliced pickles, tomato wedges, mayonnaise or sandwich sauce, chopped parsley, onions, and shredded lettuce.
Take a baguette, spread your sandwich sauce at the bottom (“Start by spreading the special sandwich sauce — which I’ve explained in detail in the Sandwich Sauce Recipe — at the bottom of your baguette.”), add pickles, then spoon in the Sosis Bandari mixture. Finish with tomatoes and parsley.
